GUIDE 01 / 1 PAGE

Food and beverage pairing

Start with the finished dish, not just its protein. Sauce, cooking method, sweetness and intensity can change the best match.

Allergen awareness

Never guess from a dish name. Confirm the current recipe, product labels and preparation process with the person in charge.

GUIDE 03 / 1 PAGE

Price the amount actually used. Keep purchased quantity, usable quantity and portion size on the same basis.

GUIDE 04 / 1 PAGE

Ingredient price changes

A case-price change is not automatically the same percentage change in the finished plate. First check pack size, usable yield and every recipe that uses it.

Recipe scaling and yield

Change ingredient quantities with a conversion factor. Then validate equipment, batch depth, process and finished yield separately.

Four-category menu review

Use four categories to choose an action, not to label a dish good or bad. This is a generic management tool, not a quality, safety or nutrition rating.

Inventory and invoice checks

A matching Vendor Item Number helps identify a product. It does not prove the delivered quantity, pack size, price, condition or allergen information is correct.

GUIDE 08 / 1 PAGE

Waste and portion control

Record what was discarded, why and where. A good waste record points to a specific action without confusing normal yield loss with an avoidable discard.

How to use these with your team

  1. Pick one skill. Use one guide for a short explanation before service.
  2. Work an example. Discuss the example, then apply the same steps to your current recipe, supplier pack or menu group. These are training references, not automatic calculators.
  3. Check the answer. Check the calculation or decision together, then agree on one action to test.

Each individual PDF is exactly one page. Use US Letter at 100%, or choose Fit when printing on A4. These are full-color guides with photographic headers; grayscale printing can reduce color ink use.

Important scope and safety notes

The allergen guide uses the U.S. nine-major-allergen framework. It is general awareness material, not certification, medical advice or a declaration that a product is safe. Follow applicable local requirements and your operation's approved food-safety procedures. Other foods can also cause allergies.

All prices, yields and sales figures in the examples are illustrative. Food-only contribution is not net profit. Source links appear inside each guide; no source organization endorses this collection.

Continue with a worked kitchen example

Use the free food cost calculator to work through a recipe, or read the partial-case inventory count example. For a broader costing workflow, see the recipe costing guide.
